Pancake Makeover

This morning for breakfast I had pancakes! So how can a low-carber be enjoying pancakes you might ask?  These are not your typical Saturday morning pancakes -- no -- this recipe comes from The Biggest Loser, and they are a blended whirl of egg whites, oatmeal, and cottage cheese with cinnamon and a teensy bit of sugar. I was skeptical because I've tried pancake alternative recipes before with an "eh" attitude, and these really made me happy! With barely a dusting of confectioners sugar, I ate these plain, just rolled up in my hand like an empty pancake taco (not the most polite execution, but there was no one here to judge me!) and didn't miss one bit of maple syrup. I had originally planned to add blueberries, but decided to evaluate this pancake on its own merits. And it is good! This recipe makes six 4-inch pancakes.

You won't be missing a thing!


BIGGEST LOSER PANCAKES
(half the original recipe)

3 egg whites
1/2 cup rolled oats, dry
1/2 cup cottage cheese (I used 2%)
1 tsp. sugar
1/2 teaspoon vanilla extract
1/2 tsp. cinnamon

Whirl all of the above ingredients together in your blender until completely smooth. Pour 4-inch circles of batter onto heated skillet (medium to medium-high heat) or griddle that's been sprayed with cooking spray. Flip when they begin to brown on the bottom and continue cooking until browned nicely on both sides.

Dust lightly with confectioners sugar and enjoy as is or with a sprinkling of berries!

  3. This is a major coincidence, Jeannie! Another blogger friend of mine just made these and posted them yesterday!!! I pinned her photo yesterday, and printed out the recipe to make them Sunday!!! Healthy minds think alike! They look delicious!

    1. I guess healthy minds do think alike! I am finding it actually a pleasure to research and create healthy recipes, and I am not missing the white flour-sugar-butter formula as much as I thought I would! Blogging about healthy recipes has actually been a great tool for managing my diabetes, and 13 pounds down in just over 3 weeks has me a believer that healthy cooking and baking is just what I will be doing from now on. Of course, I will bake the sentimental standards for friends and relatives on occasion, but for me, it's a whole new world! And though it is only 13 pounds so far, it feels like a great jump-start and I haven't felt this good in a very, very long time. Love your comment, and I love-love-love your blog!

      later became The Gold Lion) behind the Post Office on Broadway in Saratoga Springs,always dusted French toast and pancakes with confectionary sugar before serving. It makes everything look like it was dusted with fresh fallen snow. We
      eat with our eyes,first.So, these are very appealing to me.

    4. Yes, Jeannie my Dad was a wonderful baker. He told me they used to make 250 pies in a day sometimes. Can you imagine? His pies were so delicious and the crusts were always flaky.He was young when he did that. He didn't measure his ingredients. Like my maternal grandmother, he always went by the "feel" of the dough. Years later,he owned "Jock's Lunch" open only for breakfast and of course, lunch. He left his family to run the business when he enlisted in the Army.I am not sure when he closed it. I am enjoying your blog and especially reconnecting with you whom I have known since we were very young children. Welcome back into my life. :)
